I am Married to a 'Fabulous' Man, Paul.. I had 2 Incredible Children, Emma and Sam... and now there is an additional Child - an Incredible Son in Law Chris.. Yay!!!

At the moment I am creating an Amazing Cafe in Northbridge with the Family (you can 'like' us on Facebook)...It's Lots of Hard Work but I am Living in a Dream I have had for many many many years :} 

I am involved with helping Students at Risk and also creating Community Initiatives to help People... I am an Administrator by trade and have done alot of Organisational and People Management over the last 20 years..

I am on a journey to becoming health.i.er... I have been overweight my whole life and am right now working on healing my digestive system... My Body & Mind Luv Living Foods so this is where i Labour... and hopefully on the way, I am able to share it with others...

AAA ~ To Begin...Fresh Ingredients

Drinks.. Almond Milk ~ with Chocolate

 

Stage 1

2C Almonds
4C Water

Soak overnight.. this is necessary.. soaking nuts increases the vitamin and mineral content and neutralises phytates... Change the water/rinsing the almonds once or twice... this gets rid of the phytates and tannins released from the Almonds.. never use the soak water, always discard it..

 

Stage 2

Vita-Mix
1C Almonds : 4C Water (as pure as you have)

Blend on very very high for 1-2 minutes... (increase speed slowly at first)

For a thicker Milk and/or Cream you increase the nuts:water ratio.. so i use 1C soaked Almonds to 2C Water for a much thicker 'Cream'... it really depends on your taste and use..
You can also use the thicker 'Cream' as a base for mayonnaise, salad dressings, pasta sauces etc...

Stage 3

NutMilk Bag & a Very Large Bowl

Pour the Milk into a nutmylk bag that is in a very large bowl..
Start squeezing slowly (being careful not to burst the seems of the bag)...
Squeeze until all is squeezed out..

VOILA!!

The Milk is now in the Bowl... its up to you what you do next...

Options:

1.  Put the almond meal in the dehydrator (on a teflex sheet) until completely dry, then turn into flour.

2.  Put the milk in the fridge plain, and/or

3.  Put some or all of the milk back in the rinsed out blender and add other flavours (fruit/cacao/agave) and blend into a lovely milkshake...

Elements.. Basil & Black Pepper Wrappers

Elements.Cream Cheese.. with Spring Onion

Servings:  makes approx 1 kilo

 

Ingredients: 

2 cup sunflower seeds, washed and soaked
1 cup pine nuts
2 lemons, juiced 

1/3 cup raw olive oil

1 bunch of spring onion
½ tablespoon raw salt

Preparation: 

Prep: Wash/rinse the Sunflower Seeds very well and then soak in good water for at least 4 hours, 6 is better. Rinse and shake dry in your strianer or allow to air dry for a while.

  1. In your food processor process the dry ingredients (sunflower seeds, salt and pine nuts) until a fine meal.
  2. Add the lemon juice and olive oil. Process again until smooth, Scrape off sides as needed. Get it so it is rolling as it moves around your processor.
  3. Process until smooth yet very thick. Dont be scared to let it go for ages, the longer it goes the creamier it is. Then at the end add the Spring Onions and process slightly to break them into the cheese.
  4. Allow to stand for 30 mintues. If you taste it while it is being made or right after, expect the lemon to stand out. It dies down after it has sat for a while.

You can shape into cubes or balls and dehydrate for a while to get a firmer cheese for cheese salad, feta etc

Mains.. Lasagne....

the healthy version... with Zucchini Pasta, Macadamia Ricotta, Pistachio Pesto & Red Onion Tomato Chutney

 

1 Zucchini Serves 1 Person
The Toppings will serve 2-3 People (you will have extra to go into the Fridge) 

Zucchini Pasta...

1 Zucchini...

Use a peeler and, starting at the top, peel the length of the zucchini without stopping.  Keep doing this all the way around the Zucchini until you have just the middle of the zucchini (the seed bed) left.

Pinch Salt 
2T Olive Oil

~ Massage into Zucchini gently so you dont break up the strips/spaghetti...

 

For the Macadamia Ricotta

1Cup Macadamia Nuts
1T Nutritional Yeast
2T Lime Juice
Pinch Salt
4T Water

~ Place the nuts, nutritional yeast & salt in a Food Processor an pulse a few times until its all combined and broken down.

~ Gradually add the water and keep pulse processing the mixture until it resembles ricotta cheese.

~ Put into a small container with a lid.


For the Pistachio Pesto

<1Cup packed Basil Leaves
½ Cup pistachios
2T Olive Oil
Pinch Salt
Pinch Pepper

~ Place the pesto ingredients in a Food Processor and blend until well combined but still chunky so it has

 

For the Red Onion Tomato Chutney

1C Sundried Tomatoes 
1C Quartered Tomato Flesh (remove liquid leaving tomato flesh)
½ Red Onion [masserate in 2T Lime Juice in a separate bowl for 1 hour before combining]
1T Olive Oil
1t Agave
Pinch of Chilli Flakes
Salt & Pepper to taste
Only add after Food Processor finished...
1t Mustard Seed 
1 Medium Tomato Diced finely
1T Red Onion

~ Place the chutney ingredients in a Food Processor and blend to a chunky texture
~ Add the Extra Ingredients after blending to provide texture..
~ Put in a small container with a lid. 

Assembly

~ Firstly sprinkle tiny bit of Olive Oil on the plate/vessel.
~ First Layer is Zucchini, then Flick bits of Ricotta & Chutney around
~ Then Layer Sliced Tomato 
~ Repeat this Process until you put the final Layer of Zucchini on top...
~ Sprinkle with Paprika and a sprinkling of dried herbs (oregano and basil)
